Organic Cake & Pastry Flour

Anita's unbleached cake & pastry flour has a lower protein content than all-purpose flour and is finer, lighter and softer flour. As it produces less gluten in baking, it provides a fine, close crumb which is ideal for more tender pastries and baked goods.
